For Chicken Masala
1 kg chicken
3 large onions (sliced)
2 tomatoes (chopped)
2 tbsp ginger garlic paste
3 green chilies
1/2 cup curd
1 tsp turmeric powder
2 tsp chili powder
1 tbsp coriander powder
1 tsp garam masala
Mint leaves
Coriander leaves
Salt
3 tbsp oil + 2 tbsp ghee
Ingredients
For Rice
3 cups jeerakasala rice / kaima rice
5 cups water
4 cloves
4 cardamom
1 small cinnamon stick
1 bay leaf
Salt
2 tbsp ghee
Garnish
Fried onions
Cashews
Raisins
Mint leaves
PREPARATION
Wash & Marinate Chicken
Mix chicken with: curd , turmeric , chili powder , salt Keep for 30 minutes.
Cook the Masala
Heat oil + ghee. Add: sliced onions โ fry golden , ginger garlic paste , green chilies , tomatoes Cook until soft. Add: coriander powder , garam masala , little salt Now add marinated chicken. Cook until chicken becomes tender and masala thick. Finally add: mint leaves, coriander leaves
Prepare Rice
Wash rice gently. Heat ghee and add: cloves, cardamom, cinnamon, bay leaf Add rice and lightly roast for 2 minutes. Pour hot water and salt. Cook until 90% done.
Dum Cooking
In a heavy pot take first layer chicken masala then top the rice with fried onions, cashews, raisin, mint leaves , little ghee Close tightly. Cook on low flame for 15โ20 minutes.
